This traditional Arabic main dish uses mince however you can substitute it for grated carrots instead or just make these boats without it!

Yields4 Servings
 6 potatoes (large enough to be able to scoop the middle out)
 1 fresh tomato
 5 bell peppers
 2 courgettes
 1 leek (or two medium onions)
 500 g mince (Use grated carrots if you don’t want to use mince)
 1 tsp allspice
 1 tsp cinnamon
 ¼ tsp pepper
 ½ tsp garlic pepper
 1 tsp ground nutmeg
 2 tbsp salt
 2 tbsp mixed herbs
 1 tbsp butter or margarine
 1 jar of tomato pasta sauce (like tomato and basil)
 1 tomato soup can (optional) – if you want more sauce
 1 ½ cups basmati rice (For water ratio - 2 cups)
 4 cardamon pods
 4 bay leaves

With the potatoes, peel them and scoop out the middle using a spoon. You’ll want to keep a small edge around the potato (About 1cm).

Chop bell peppers, leek, tomato and courgettes into small pieces.

Mix oil, pepper and salt in a bowl and mix in the potatoes. You can put them in the oven on a baking tray for 30mins at 250C or just enough to give it a nice brown colour around the edges OR in an air fryer for 18mins at 200C for the same effect.

Put a little oil and around 1 tbsp of butter in a pot and then cook the mince until brown. Add in leeks (or onion if you don’t have leeks) into the pot with bell peppers, 1 fresh tomato and courgetti. Put in your cinnamon, allspice, ground nutmeg, salt, pepper, garlic pepper and mixed herbs and cook for 30mins on a high heat.

In a baking dish add in the tomato pasta sauce with a bit of salt to mix in, then add in your potatoes and scoop in the vegetable mixture into the well in the potatoes. Grab some of the sauce from below and pour over the potatoes and put in the oven for another 15 to 20mins.

Wash the rice 2 – 3 times in warm water until it runs clear. Put vegetable oil and cardamon pods (4 pods), 4 bay leaves and your rice into a pot and cook for a few minutes. For one cup of rice, add in 1 cup and a ¼ of water (which means for 1 ½ cups of rice you put in 2 cups water!) and boil for 10-15mins. Drain out the water and stir your rice. That’s it all done!
Take out and serve with the potato boats.
